Cooking Technique and Product Quality
Impingement uses high-velocity air to cook the product, similar to a
hair dryer. This can dry out the product and not thoroughly bake the
pizza. Q-MATIC uses gentle, yet powerful infared heat that penetrates
the product, which cooks the pizza completely and allows the toppings to
retain their moisture.
Quiet Operations
To generate heat, impingement uses air blowers fans and motors, which
are extremely noisy and can breakdown. The Q-MATIC oven are virtually
silent and very reliable.
